Limfjord mussels in a marinade of cold-pressed rapeseed oil and apple cider vinegar, with dill and fennel seeds.
The “blåmuslinger” (mussels) grow very slowly in the cold water of the Danish Limfjord. This ensures that they develop a particularly fine taste and texture. Most of them are shipped to foreign kitchens, but a select few go to local producers.
