Every year, when the albacore tuna fishing season begins, the best and most beautiful specimens are sold at the Burela fish market. After many careful operations, the thin slices are put in cans by hand and covered with extra virgin olive oil.

The house "Ramon Peña" based in Ribadumina, Galicia, can look back on a history of more than 90 years: Founded in 1920 by José Peña Oubiña in Cambados in Galicia, the company is now managed by the third generation of Nely Concheiro. Their business is the production of premium, additive-free canned fish and seafood from the rias (fjords) of Galicia that enjoy worldwide popularity. Ramon Peña's declared goal is to get gourmets and restaurateurs all over the world to rethink. Therefore, only freshly caught fish of the respective season are used and everything is done by hand, apart from the sealing and labeling of the cans. The combination of the best ingredients, old traditional recipes and meticulous quality control results in products of absolute top quality that are completely convincing.

The tuna family has around ten different subspecies. Ramon Peña only uses albacore tuna because it is abundant in the fjords of Galicia, is particularly suitable for canning and is not threatened with extinction. Its flesh is lighter in color, almost white (hence the name) and has a milder flavor than red tuna. Unlike many of its conspecifics, it is usually only 1.10 meters long when fully grown and weighs a maximum of 15 to 20 kilos.

The albacore tuna is particularly rich in nutrients such as omega-3 fatty acids, phosphorus, potassium, vitamins, amino acids and proteins.
