For this Galician delicacy, Ramon Peña selects the best small sardines from the Rias Galegas directly at the port of Vigo or Pontevedra.
After cleaning (removing the head and gutting), the sardines are grilled and toasted and stuffed into the cans by hand. Added to this are just the Pimientos de Padrón, a pinch of salt and the finest olive oil. All this within a few hours of the fishing boats landing in the harbor, for even more freshness!
The pimientos (small green peppers) come from small farms in the immediate vicinity of the small, famous town of Padrón - hence the name.
You can hardly get more Galicia!

These sardines are ideal for tapas and mixed starters, but also taste wonderful with pasta, rice, pizza or in a salad.
