A recipe with Provençal notes

A pleasantly balanced, mild composition of delicate sardines with sweet, glassy sweated fennel, fruity dried tomatoes and roasted onions. Add a squeeze of lemon juice and a pinch of herbs de Provence. Wonderfully light and full of sunny aromas!

The name Émietté (from "miete", French crumbs) describes a method of preparation in which the fish fillets are easily pulled apart and then mixed with the sauce. This results in a wonderfully fresh, juicy composition in which all the aromas come into their own.
