To make their fish last longer, the buccaneers, pirates of the Caribbean, used to smoke it. With salt smoked on red alder and chili peppers heating up the mackerel in this preserve, this tradition comes alive on your plate... and your taste buds too!

The name Émietté (from "miete", French crumbs) describes a method of preparation in which the fish fillets are easily pulled apart and then mixed with the sauce. This results in a wonderfully fresh, juicy composition in which all the aromas come into their own.
