Also known as albacore tuna, Thunnus Alalunga or Albacore is the type of tuna most prized for its texture and mild flavor.

Together with the so-called "Catalan sauce", ie the red marinade, it is excellent as an aperitif or to refine recipes.

It is the highest quality fish of the tuna family.

We commonly call it "Bonito del Norte" because it is caught in the Bay of Biscay in the Cantabrian Sea. It is a seasonal fish caught in the fishing season also known as the "Cantabrian Coast" or "Bonito Coast".

In order to preserve the quality and nature of the bonito as much as possible and to improve the sustainability of our seas, most bonitos are caught individually using traditional fishing gear.

Consumption of albacore tuna is a healthy and complete food that is essential for a balanced diet. Its high nutritional value increases when canned. In addition, canned albacore tuna can receive additional nutritional value from other products (such as olive oil).

Conservas Zallo is a family business specializing in canned and semi-canned artisanal gourmet products, bringing the best of the sea to the table since 1926. Our specialties are albacore tuna and Cantabrian anchovies, always caught in season, caught sustainably with hooks to ensure our seas will continue to feed us for many centuries to come. We use the same preservation techniques as our ancestors to preserve the quality and flavor of a product whose texture remains as delicate as day one. Our factory is located in Bermeo, Biscay, one of the most important fishing ports in the world, whose inhabitants still preserve their history and tradition. In short, we are a company committed to tradition, quality and taste in search of the "sounds of the sea".

    Details

Even the ancient Romans valued sardines and ate them salted, marinated or smoked. To this day, the sardine is and will remain a high-quality product if the quality and production methods are right.

Thanks to their short lifespan, they have absorbed very few pollutants from the sea and have a high proportion of omega-3 fatty acids, vitamins and trace elements. 100g of sardines (about 8 fish) contain 40% of the recommended daily dose of calcium and 100% of the vitamin D necessary to absorb the trace elements. In order for the human body to be able to absorb all of these valuable nutrients, it is essential that the sardine is preserved in high-quality olive oil, because only this oil allows the human body to break it down and metabolize it.

For the sake of enjoyment, however, you should definitely not do without the many other great creations from the incomparably rich range of flavors of canned sardines: sardines in a fruity sauce, in white wine, in butter, with water and lemon... try it out!
