The sauce ravigote is a "pimped vinaigrette". The name Ravigote comes from the verb "revigorer" which means something like "make fit again". True to the motto: Sour makes fun!
These sardines are rich in flavors with a perfectly dosed balance of mustard, gherkins and vinegar, without the tiny pinch of sweet allspice that makes the most important difference.
