With this recipe, the Belle-Iloise takes us to the South Seas to Zanzibar in the Indian Ocean. A typical mixture of ripe fruit and warming spices conjures up the flavors of the Orient on your plate.

The name Émietté (from "miete", French crumbs) describes a method of preparation in which the fish fillets are easily pulled apart and then mixed with the sauce. This results in a wonderfully fresh, juicy composition in which all the aromas come into their own.

Even the ancient Romans valued sardines and ate them salted, marinated or smoked. To this day, the sardine is and will remain a high-quality product if the quality and production methods are right.
